Did you know avocados are not only great for reducing bad cholesterol levels, but also provide 10 grams of fiber? Who knew?
Avocado and Lime Summer Salad:
Ingredients:
4 Hass avocados (ripe but firm)
1/4 cup of scallions finely chopped (about 2-3 stems)
1 red bell pepper, cut small
1/4 cup red onion, finely chopped
1/4 cup of cilantro, chopped
1/4 cup of fresh lime juice (2 small or 1 large)
2 Tbl. of olive oil
Salt and Pepper to taste.
Directions:
- Mix all ingredients except the avocado and 1/2 of the lime juice.
- Cut the avocado in half, remove the inner pit and peel. Chop into 1/4 inch cubes.
- Squeeze the remaining lime juice over the avocado.
- Gently stir in the avocado in with the other ingredients in the large bowl. (Careful not to stir too much, which will cause the avocado to turn creamy.)
- Add salt and pepper to taste.
- Chill for at least 20 minutes.
