Avocado and Lime Summer Salad

Ingredients:

4  Haas avocados ripe but firm

1//4 cup of scallions (2-3 stems) finely chopped

1 red bell pepper, cut small

1/4 cup of red onion, finely chopped

1/4 cup of fresh lime juice (2 small limes or 1 large)

1/4 cup of cilantro, finely chopped

2 Tbl of olive oil

Salt and Pepper to taste

Directions:

Mix all ingredients except the avocado and 1/2 of the lime juice in a large bowl.

Half the avocado, remove pit, peel, and chop into 1/4 inch cubes

Squeeze remaining lime juice over the avocado

Gently stir avocado into your mixed ingredients without over stirring because it will become creamy.

Add salt and pepper to taste.

Chill for 20-30  minutes.
