
It seems Starbucks releases their Pumpkin Spice Lattes earlier each year, not unlike retailers putting up the Christmas merchandise already. This year, their Pumpkin Spice latte released on August 22nd. If you are one who rushes to the nearest coffee chain to get your pumpkin fix, I have a treat for you.
In the kitchen, we gather around the stove to make a healthier version of the popular drink. What I love about this recipe? You can sweeten it anyway you want, it has no artificial flavors, and offers a healthy boost of antioxidants. Who knew you could get a boost of fiber, magnesium, potassium, and calcium from a pumpkin latte?
Recently, we gathered the girls from “The Playroom” and their parents in our farmhouse kitchen and created a large pot of pumpkin goodness. We hope you enjoy this recipe, and let us know if you try it in the comments or on our private Facebook group.
Creamy Pumpkin Spice Lattes: (makes 4 servings)
Ingredients:
4 cups of whole milk or milk alternative
8 shots of espresso or 2 cups of strong coffee.
(For children: organic decaf was used)
4 Tbl of Maple Syrup or the sweetener of your choice
4 tsp of pumpkin spice
4 tsp of vanilla
3/4 cup of plain pumpkin puree (canned our homemade)
Optional Topping:
Whipped cream
Dash of cinnamon
Directions:
In a heavy saucepan mix your espresso shots or coffee with the plain pumpkin puree, pumpkin spice, vanilla, and sweetener. Heat and stir continuously. Do not bring to a boil.
Heat up your milk in a small saucepan stirring continuously to keep from scorching. Do not boil. After heating froth in a frothing machine. If you do not own a frothing machine. You can pour milk in a mason jar, shake vigorously, remove top of jar, and microwave milk to stabilize the foam.
Divide pumpkin mixture between four mugs and top with frothed milk. Additionally you can add a shot of whipped cream and a dash of cinnamon, as that going-all-extra topping. Of course, sweeten to your taste.
