
These lemon cookies are a crowd pleaser, and a favorite amongst our farm family. Trish makes these for us often and we know we better grab one before they’re gobbled up by the kids.
With summer fast approaching, this is a recipe you’ll want to hold on to. It’s the perfect cookie for a hot afternoon.
Lemon White Chocolate Chip Cookies
2 1/4 cups flour
1 teaspoon baking soda
3/4 teaspoon cream of tartar
1/2 teaspoon of salt
1 1/2 sticks (12 tablespoons) butter, at room temperature
1 cup of sugar
All the zest of 2 lemons
2 tablespoons fresh lemon juice
2 eggs
1/2 teaspoon vanilla
1 11- ounce bag of white chocolate chips
- Position racks in upper and lower thirds of oven.
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.
- Whisk the flour, baking soda, cream of tartar and salt in a bowl set aside.
- Beat the butter, sugar, and lemon zest in a large bowl using medium speed until light and fluffy usually around 3 minutes.
- Beat in eggs one at a time, then beat in lemon juice and vanilla.
- Reduce mixer speed to low and beat in the flour mixture in small batches until combined.
- Stir in white chocolate chips.
- The dough will be sticky.
- Drop about 1 tablespoon of dough onto parchment paper, about 1 1/2 inches apart.
- Bake 10-12 minutes.
- Cookies are done when they’re barely golden around the edges.
- Allow to cool for 3 to 5 minutes on the baking sheets then transfer to rack to allow complete cooling.
Note: If you find the cookies spread to thin during baking, chill the batter before baking.
Recipe makes about 6 dozen dependent on size of your cookie.
